Now, the hard part of this equation is: Simplicity is hard. Really hard. When there are fewer steps, each step has more of an effect overall. Also, many of these steps are out of your control. That's why we do what we do:

Where It Begins

Quality coffee starts all the way back at the farm where the beans are grown. We source only the highest grade green coffee beans (Grade 1, EP, Supremo, etc) from countries that produce outstanding coffee. We constantly source new beans to keep things interesting and continue the hunt for The Best Bean.

 

What We Do For You

Once the beans get to our door, we make sure they are properly stored prior to roasting. Once they hit our roaster, we take them from Light to Medium to Dark roast in a controlled, repeatable manner focusing on temperature and timing of each roast. Each batch of beans is no larger than 1lb with many being 8 - 12 ounces. The end result of each batch is 15-20% smaller than what goes in. Once the beans are roasted, they go into custom made cooling setups and come down to room temperature before resting for 24 - 72 hours.

At this point, we grind your beans, if you have requested it. This is a VERY important step that we'll talk about a bit later. We do offer grinding included for free with your order, if you'd like.

Once the beans are roasted and rested, we package them into food-safe bags with degassing valves installed. Without those valves, your coffee wouldn't taste very good after a few weeks (due to CO2 build-up). Finally, they are carefully packaged and shipped across the US to get to your door.

All of this happens BEFORE the beans ever hit your counter and it can make or break the brew that you enjoy.

What You Do For You

Storage

This is easy to get wrong but is the easiest of the 3 steps that you can control. We think of our refrigerator and freezer as a preserver of food and it's usually true. However, they're both actually bad for your coffee. Store your coffee at room temperature in an air-tight, container away from light.

Grinding

There are a lot of grinders out there. A whole lot. Here are the high points:
  • Burr Grinders beat Bladed Grinders in quality but are more expensive
  • Electric grinders are convenient but more expensive and equal in quality to Manual grinders
You want to grind your beans to the right consistency as close as possible to when you're brewing them. Once beans are ground, they start to lose flavor immediately. Other than age, heat and inconsistent grind size are your biggest enemies and can lead to a lackluster brew.

Brewing

This is where the fun part starts and has the largest number of options available. Here are some common brewing methods from least to most expensive:
  • Pour Over
  • French Press
  • Standard Coffee Pot
  • Espresso
  • Hybrid options (Mocha Pot, Aeropress, etc)
Less expensive doesn't mean lower quality. We often drink pour over, drip coffee and espresso at home. It depends on how much time we have and what level of convenience we're looking for. I won't go into too much detail on the various brewing methods except to say that each can make great coffee. Choose what makes sense for your taste and budget.
